LAMB, CARAMELISED ONION AND HARISSA SAUSAGE ROLLS

INGREDIENTS

  • 3 brown onions, very finely sliced
  • 2 Tbsp extra virgin olive oil
  • 2 tsp brown sugar
  • 2 tsp balsamic vinegar
  • sea salt flakes and freshly-ground black pepper
  • 500g lamb mince
  • 1 tsp toasted fennel seeds, ground
  • 1 tsp toasted caraway seeds, ground
  • 4 cloves garlic, minced
  • 1 Tbsp harissa sauce
  • 4 sheets puff pastry
  • 2 eggs, beaten
  • 2 tsp sesame seeds
  • 1 tsp poppy seeds
  • yoghurt and tomato relish, to serve

LAMB, CARAMELISED ONION AND HARISSA SAUSAGE ROLLS

3-STEP RECIPE

Step 1

1 Preheat oven to 200°C. Fry the onions in olive oil in a heavy based pan over a moderate heat for 10 minutes, until browned and reduced by half. Add the sugar and vinegar and cook for a further 3 minutes. Season with salt and pepper, then set aside to cool completely.

Step 2

2 Combine with the mince, spices, garlic and harissa, then season with salt and pepper and mix well until smooth. Divide into eight pieces and form each into a log 12cm long. Halve the pastry sheets and brush with egg.

Step 3

3 Place a mince log at the near edge of each and roll up, not too tightly. Brush the outsides with egg and sprinkle with seeds. Arrange on a lined oven tray and bake for 25 minutes, until deep golden and crisp. Serve with yoghurt and tomato relish.
