Combine the flour and sugar in a large bowl. Whisk the eggs, buttermilk and vanilla in a second bowl. Stir the melted butter into the flour mixture, then gently stir in the buttermilk.
Warm a little vegetable oil in a non-stick pan, then add ¼ cup of batter at a time, cook for 1½ minutes, then turning and cooking for a further minute. Repeat with the remaining batter, then serve with maple syrup, berry compote and cream.
