1 Combine the mince, onion, garlic, barbecue seasoning, Worcestershire sauce, zest and egg in a large bowl and mix thoroughly, then season with salt and pepper. Add the breadcrumbs and mix again, then divide into four and flatten into thick patties.
2 Wrap the patties in four bacon rashers each. Pour the oil into a large skillet set over a moderate heat, then fry the patties for 5 minutes on each side, until the bacon is crisp and the patties are firm to touch.
3 Place two cheese slice on each pattie to melt slightly. Arrange the lettuce and tomato on the bases of the brioche buns, then set the patties on top. Finish with warm sauerkraut and mustard.
